Barbecue Mahi Mahi with Broccoli Grape Salad
This picnic-inspired supper features rosemary roasted potatoes and a broccoli-grape salad (trust us, it's delicious!), all paired with barbecue mahi mahi.

Broccoli Grape Salad Dressing
Mayonnaise
1/2 0.25 cup
White sugar
3 1.5 tablespoon
Apple cider vinegar

Prep ahead (optional)
a. Chop broccoli into small bite-sized florets; ¼” dice stems. b. Cut potatoes into ½-1” pieces. c. ¼” dice celery. d. Slice grapes in half. e. Thinly slice or mince red onion. f. Very thinly slice rosemary leaves.
Instructions

Roast potatoes:
a. Preheat oven to 425º. Prep large baking pan with oil or nonstick spray. Line a second small baking pan with foil or parchment.
b. To large bowl, add red potatoes (½-1” pieces), 1 tbsp olive oil, ½ tsp salt, and rosemary (finely mince leaves). Toss to coat.
c. Add to large baking sheet in even layer; roast until tender, about 20-25 minutes, stirring halfway through cooking for even caramelization.

Meanwhile make broccoli grape salad:
a. In small sauté pan over high heat, add pecans (rough chop). Stirring, or moving pan constantly, toast until golden and fragrant, about 1-2 minutes. Set aside to cool.
b. To second large bowl, add red onion (mince), celery (¼” dice), broccoli (chop small bite-sized florets, ¼” dice stems), grapes (slice in half), toasted pecans, and ½ tsp salt. Toss to combine.
c. Add broccoli salad dressing; toss to coat and set aside.

Cook the mahi mahi:
a. Season mahi mahi with ¼ tsp salt and a pinch of black pepper.
b. In large sauté pan over medium-high heat, add 1 tbsp olive oil. Add mahi mahi; cook until caramelized, about 2-3 minutes each side. Fish will not be cooked through at this point.
c. Add mahi mahi to small, lined baking pan. Liberally brush or spoon barbecue sauce over mahi mahi, coating both sides.
d. Roast in oven until sauce caramelizes and fish is cooked through, about 5-6 more minutes.

Serve:
a. Divide barbecue mahi mahi among plates.
b. Serve roasted rosemary potatoes and broccoli-grape salad alongside.
Chef's notes
You may replace the fish with any favored cut of chicken — drumsticks, wings, thighs, or chicken tenders would all be a great fit. Vegetarians can try barbecue tempeh or tofu.
