Balsamic Glazed Chicken with Roasted Winter Vegetables
Sticky, sweet liquid gold, otherwise known as balsamic glaze, dresses up chicken and pairs beautifully with a harvest-full of earthy caramelized winter root vegetables.

Prep ahead (optional)
a. ½” dice red potatoes, turnips, and yellow onion. b. Cut brussels sprouts in half, keeping root in tact. c. Peel carrots; cut ½”-thick coins or dice. d. Mince half of garlic cloves and crush the other half with the side of your knife.
Instructions

Prep glaze and chicken:
a. Preheat oven to 425º. Prep a large baking pan with olive oil or foil.
b. Portion chicken thighs and season with ½ tsp salt and ¼ tsp black pepper. Add skin-side down to one side of baking pan, leaving room for vegetables.
c. In a small sauté pan over medium heat, add 2 tsp olive oil. Add half of garlic (mince); cook until fragrant and just beginning to turn golden, about 1-2 minutes. Watch closely.
d. Add balsamic glaze. Stir until glaze thickens slightly, about 3-4 minutes. Drizzle or brush glaze over chicken.

Roast vegetables and chicken:
a. In a large bowl, add yellow onion (½” dice), purple top turnips (½” dice), carrots (peel, ½”-thick coins or dice), red potatoes (½” dice), brussels sprouts (cut in half, leaving root intact), remaining garlic (crush with side of knife), 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Toss to coat.
b. Add vegetables to other half of baking pan in an even layer. Add to oven. Cook until chicken is cooked throughout, about 15-18 minutes. Remove chicken from oven and set aside to rest. Stir vegetables and return to oven until caramelized and fork-tender, about 10-12 more minutes.

Serve:
a. Plate balsamic glazed chicken.
b. Serve roasted vegetables alongside. Roasted garlic can be rough chopped or left whole. Pour the wine and enjoy.
Chef's notes
If chicken isn't a preference, balsamic glaze is a beautiful match for just about any grilled or roasted protein, from fish to pork to beef. And for vegetarians, the glaze is nice on a seared tofu "steak."
