Baked Tofu Burrito Bowl
Tofu marinated in a Tex-Mex spice rub and baked with a hot and sweet glaze; roasted bell and sweet peppers, protein packed black beans, punchy salsa and fragrant cilantro lime rice. This bowl will please royalty.

Prep ahead (optional)
a. Finely dice red onion and roma tomatoes. b. Trim bell peppers and sweet peppers, slice into ½" thick strips. c. Pit avocado, thinly slice. d. Thinly slice yellow onion. e. Chop romaine lettuce bite-sized. f. Deseed jalapeno as desired, finely dice. g. Juice lime. h. Mince garlic. i. Finely chop cilantro.
Instructions

Cook tofu and peppers:
a. Preheat oven to 400° and line a baking tray with paper.
b. Drain excess water from tofu. Pat dry with a paper towel. Chop into 1" cubes.
c. In a bowl, mix together the tofu, 3 tbsp cornstarch (1½ tbsp for 2 person portions) and the Tex-Mex spice rub. Toss to coat the tofu evenly. Drizzle half the hot and sweet glaze over the tofu and toss to coat well. Place the tofu on one side of the baking tray.
d. In another bowl, mix together the bell pepper (trim, slice into ½" thick strips), sweet peppers (trim, slice into ½" thick strips), ¼ tsp salt and ½ tbsp olive oil. Toss to coat the peppers evenly. Place on other side of the baking tray.
e. Cook the peppers and tofu in the oven for 15 minutes. Remove tray from oven, brush the remaining hot and sweet glaze on the tofu. Cook for another 15 minutes, or until tofu has crisped up and the peppers are soft.

Meanwhile, prepare cilantro and lime rice:
a. In medium saucepan over medium-high heat, add 2 cups water (1 cup for 2-person portion) and ¼ tsp salt. Cover and bring to a boil.
b. Add long-grain rice; stir immediately. Reduce heat to low, cover, and cook until tender, about 12-15 minutes. Allow to cool for a few minutes and fluff with fork.
c. Transfer the rice to a mixing bowl and add the lime (juice) and cilantro (finely chop). Toss to combine.

Prepare the black beans:
a. Heat ½ tbsp olive oil in a saute pan. Add the yellow onion (thinly slice), garlic (mince) and ¼ tsp salt. Saute for 3-5 minutes, or until onion softens.
b. Add the black beans (drain; rinse) and stir to combine. Cook for 2-3 minutes or until beans are warmed up.

Prepare salsa:
a. In a bowl, add the red onion (finely dice), roma tomato (finely dice), jalapeno (Optional; deseed as desired, finely dice) and ¼ tsp salt. Toss to combine.

Assemble and serve:
a, Divide romaine lettuce (chop bite-sized) amongst bowls. Add a layer of the cilantro and lime rice. Top with avocado (pit, thinly slice), roasted peppers, baked tofu, salsa and black beans. Enjoy!
Chef's notes
Feel free to add any other veggies or toppings of choice to this meal. Fire roasted corn, roasted red onions, any dairy or plant-based cheese are some suggestions.
