Baharat Baked Mahi Mahi with Couscous
The marinade for this fish and potato bake features Baharat, a Middle-Eastern spice blend of 7 aromatic spices - cumin, coriander, paprika, cinnamon, clove, nutmeg and cardamom.

Prep ahead (optional)
a. Cut yellow onion into thick wedges. b. Halve new potatoes. c. Large dice beefsteak tomatoes. d. Deseed jalapeno as desired, mince. e. Chop lettuce mix bite-sized. f. Rough chop parsley and mint.
Instructions

Marinate the mahi mahi:
a. Portion mahi mahi and season with ¼ tsp salt. Add to a bowl. Add the baharat marinade and mix well to coat evenly.
b. Set aside for 15 minutes to marinate.

Roast the vegetables:
a. Preheat oven to 420° and grease a baking pan.
b. In a mixing bowl, add the yellow onion (cut into thick wedges), new potatoes (halve), ¼ tsp salt and 2 tsp olive oil. Toss to coat evenly.
c. Add vegetables to baking tray and bake in oven for 15 minutes.

Meanwhile, cook the couscous:
a. Boil 1 cup of water (½ cup for 2-person portion) in microwave.
b. In medium saucepan over medium-high heat, add 1 tsp olive oil, ¼ tsp salt, and couscous. Stir to coat couscous with oil, about 1 minute.
c. Add boiling water, cover, remove from heat, and let stand for 5 minutes. Fluff with fork.

Cook the mahi mahi:
a. Once the potatoes and onions finish 15 minutes in the oven, remove baking tray from oven and add the mahi mahi to it. Return the tray to the oven and continue cooking for 15-20 minutes. Check at 15 minutes to see if the fish is cooked through.

Assemble the tomato salad:
a. In a bowl, mix together the beefsteak tomato (large dice), lettuce mix (chop bite-sized), jalapeno (Optional. deseed as desired, mince), mint (rough chop), feta cheese (crumble), ¼ tsp salt and tomato salad dressing. Toss to coat evenly.

Serve:
a. Heat a small saute pan over medium-high heat. Add the sesame seeds. Toast for a minute, stirring constantly. Watch closely!
b. Divide couscous amongst plates. Top with baharat mahi mahi and potatoes. Garnish with toasted sesame seeds and parsley (rough chop). Serve tomato salad alongside. Enjoy!

Baharat (Arabic for “spice blend") is a fragrant mixture of 7 spices - cumin, coriander, paprika, cinnamon, clove, nutmeg and cardamom. It has warm and sweet undertones similar to allspice, but even deeper! In Middle Eastern and North African kitchens, baharat is often used as an all-purpose seasoning for things like grilled meats (particularly lamb), chicken, stews and soups, sauces, and even roasted vegetables.
