Asian Chicken Lettuce Wraps with Rice
Gingery sauce is a delicious match for sweet potatoes, shiitakes, and spinach tucked into local chicken — all wrapped in a lettuce leaf and served alongside rice.

Prep ahead (optional)
a. Chop spinach into bite-sized pieces. b. Compost tough shiitake mushroom stems; ¼” dice caps. c. Divide lettuce leaves, leave whole. d. ¼” dice ½ yellow onion. e. Peel sweet potato; ¼” dice. f. Mince garlic.
Instructions

Cook jasmine rice:
a. In medium saucepan, over medium-high heat, add 2 cups water (1 cup for 2-person portion). Cover and bring to a boil.
b. Add jasmine rice; stir to combine. Reduce heat to medium, cover, and cook until tender, about 20 minutes.

Cook chicken and vegetable filling:
a. Chop chicken thighs into bite-sized pieces.
b. In large sauté pan over medium-high heat, add 1 tbsp sesame oil (or olive oil). Add garlic (mince), ½ yellow onion (¼” dice), and shiitake mushrooms (compost tough stems, ¼” dice caps). Cook until onion is translucent, about 2 minutes.
c. Add chicken. Cook until chicken begins to brown, about 4 minutes, combining with onion and garlic.
d. Add sweet potatoes (peel, ¼” dice), vegetable broth paste, ¼ cup water, and Asian stir fry sauce. Cook until sweet potatoes just begin to soften but aren’t mushy and sauce thickens, about 6-7 minutes.
e. Remove from heat and stir in spinach (chop bite-sized) until wilted.

Serve:
a. Divide jasmine rice among plates.
b. Scoop about ⅓ cup stir fry chicken into romaine lettuce leaf. Fold over taco-style and dig in.
Chef's notes
If your family doesn't eat chicken, this recipe works equally well with ground pork. For vegetarians, tempeh can stand in for ground meats, or add a mix of mushrooms from our Farmer's Choice plan.
